Christmas Countdown

IT’S HAPPENING. IT’S ALMOST HERE!! THE CHRISTMAS COUNTDOWN HAS BEGUN!

6 Days 'Til Christmas!
6 days to go!

Okay, okay, I can’t lie to you guys. I’ve obviously been counting down to Christmas since October for much longer than this. But since we are officially down to less than one week to go, I can now proclaim it to the world. Huzzah! And I have plans for this week. Oh, the plans that I have! I’ve already resolved to kick my weight loss back into action with the coming of the New Year, but until then… mwahahaha!

Though most of my weekend was dedicated to kicking some serious Sith butt in Star Wars: The Old Republic, the new MMORPG that Ben gave me as part of my early Christmas present (#nerdalert), I did manage to sneak out to the grocery store to pick up supplies for all the Christmasing that’s going to go down in my kitchen this week.

BAKE ME
Dark chocolate chips, white chocolate chips, pecans, funfetti cake mix, unsalted butter, and frosting.

As you can see, I have baking plans up the wazoo for this week. So much deliciousness… so terrible for me. It’s going to be legen–wait for it–dary! Don’t fret though, I did pick up a few healthy items too.

Production
Button mushrooms, red grapes, a red onion, lemons, and fuji apples.

Green & Red
Brussels sprouts, baby spinach, craisins, and salad greens.

As well as some semi-healthy-ish items. Heh.

Animal
Bleu cheese crumbles, steak pieces, and ground turkey breast.

Saucy
Diced and peeled tomatoes, reduced fat Wheat Thins, tomato sauce, and kidney beans.

Cooking has been woefully absent from my life lately, so I’m excited for the edible possibilities of my grocery store spoils. Also, Steve brought me golden beets!!

Golden Beets

Apparently Wegman’s is the place to get these bad boys, since that’s where he picked them up. I still haven’t spotted them myself yet, but I guess that now if I get desperate I know I can drive for half an hour to the closest Wegman’s, haha. Regardless, I am SO excited to roast them up!

This countdown has even managed to make me happy it’s Monday, because it just means that I’m that much closer to presents Christmas. Whee!

Do you have any specific baking or cooking plans this week? I can’t wait to make yet another valiant, if ultimately unsuccessful, attempt at replicating my Aunt Joanie’s incredible sugar cookies, as well as to build the Christmas gingerbread house — a family tradition!

  1. Oh man! A few friends and I are having a Christmas party on Friday evening and there will be tons of delicious food. Sad part is, I have so many awkward food allergies and sensitivities that I really have to think hard about what is worth suffering over. Mac and Cheese might be the one…

    • At least this way you’ll know that there will be at least one thing that you can eat? Maybe?

  2. Buahaha, this is the perfect time of year for playing video games. I love it. I spent most of my weekend playing The Sims 3 which I never do. It felt wickedly indulgent and awesome. I’m excited that I have a 4 day work week this week! And there’s a lot of baking to be done still, which always makes me happy!

    • Jealous of your 4-day work week!! It’s still a full week for me, unfortunately (I get the Monday after Christmas off) but hopefully it’ll be light. Also, our work holiday potluck is on Wednesday, so at least that’s something that will mean I don’t have to do real work! ;)

  3. I have copious amounts of baking to do which I have seriously been slacking on. There are orange rinds to candy, marshmallows to make, cookies to bake…this is why I took this week off! I have 4 more hours of work from this very moment and then….FREEDOM!!! Ahh…can’t wait! I am going to bake and catch up on Parenthood…I am like 3 seasons behind. And maybe some Little Big Planet…or maybe some crafting…or maybe just NOTHING! Oh that’s nice.

    I am plugging Wegmans too. It is so worth the drive. They sell everything. Like, food and Le Crueset enamel cookware. It is a magical wonderland of goodness. And there is a train.

  5. You know, sometimes if you OD on sugar around the holidays, you’ll be so sick of it come New Years and won’t even want to touch the stuff. Then you’ll have more motivation for eating better. :)
    I look forward to seeing all of your yummy baked treats this week and try to hold myself back from licking the screen.
    Seriously, I just need to survive this week. My students are always OFF THE WALL in the week leading up to Christmas break!

  7. Since we’re leaving Tuesday night to celebrate the holiday with the Fiance’s family down in Atlanta, this weekend was my flurry of baking. I baked for 2 days straight. Ow, my back. Literally, 2 days, all day. Ow. Again. I baked a bazilllllion cookes. Several dozen of like 8 kinds of cookies. Those are for the fam. I also baked a chocolate stout whiskey caramel irish swiss buttercream cake, your chocolate cream pie, and some north pole cupcakes for the office. We’re having a dessert competition and I’m trying to hedge my bets with multiples. But, gloriously, I am done baking. Did I say ow yet? I have battle wounds too. Several of my knuckles were kissed by the oven. Oops. Enjoy your baking and festivities!!

  8. I literally spent all day Saturday and 6 hours on Sunday baking.. over 300 cookies (they are for gifts.. not for me!).. my Kitchen Aid was smoking by the time I was done. I <3 baking!

  9. I can’t believe it’s Christmas week!!! My two oldest have school until Wednesday and then the fun can begin on Thursday! I’m not sure what we’ll be doing, but I plan on making some memories ;)

    this week my mom and I are making three different kinds of cookies! I can’t wait till the cookie dough (and the stomachache to follow! haha)

  12. I am some whoopie pie filling away from being finished with the Christmas baking after 7 solid hours in my kitchen yesterday. And I’ve been counting down to Christmas pretty much since December 26th 2010 ;)

  13. Thats cool… I’ve always wanted to build a gingerbread house! My baking plans for the week include pumpkin pie bars with gingerbread crust. That’s close? Right? Should be yummy. :)
