Ahhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhh!! My 5K is tomorrow. Ahhhhhhhhhhhhhhhhhhhhhhhhhh!!!!

I’m so nervous slash excited slash nervous about it! Despite all my best intentions, Monday I didn’t get up to 3 miles on the treadmill. My legs were heavy and sluggish and I really just wasn’t feeling it at ALL. I did, however, run 2.62 miles which is still my further distance yet. Yesterday I hopped back on the machine and did a very quick 1.3 miles, plus walked an additional .5 miles. I know I could have done more, but I didn’t want to push myself too hard and not be able to full recover today, my rest day. Plus, I ran at a much faster pace than I usually do (I did the .3 part at 6 on the treadmill, which is like an 11 minute pace. For all you runners out there I know that’s kids stuff, but for me it feels really fast!)

I also got to try out the new UnderArmour running leggings that my sister got me for running outside. They’re a size smaller than the last pair she got me, and they totes fit! Even though they’re compression! Huzzah!

They’re pretty awesome but because they’re all-season and not for when you get hot, my legs were burning up in them during my run. That might have contributed to me stopping after so short a distance, too. Either way, if it’s chilly tomorrow morning (and I hear it’s supposed to be) I will most certainly be donning them.

Okay, what else, what else. Oh, yes. Monday night for dinner I had a Make Your Own Burrito Bowl night. Cooked up my own modifications of my favorite Chipotle ingredients and did it up!

Though you can’t see most of it, in the bowl you have cilantro-lime brown rice (which came out kind of hard, not sure if I used enough water, but was still tasty), chicken which actually turned out deliciously (the trick is to cook the chicken WHOLE, and then cut it up!),peppers and onions, kidney beans (I didn’t have black), a tomato, corn, and avocado salsa (I made the mistake of using canned diced tomatoes that were flavored with garlic and olive oil, so it ended up tasting kind of Italian-y, but it was still good!), and I topped it off with plain nonfat greek yogurt. Yum! It definitely hit the spot, and I used up all ingredients that I already had in the house so it saved me some monies. Which is important, because I just got the bills for my TWO CT scans I got when I had my kidney stone. If I had known how much of it my insurance wasn’t going to cover, I wouldn’t have even gotten ONE CT scan! They were useless anyway. Urgh!

Anyway, I can’t think about that because it makes me really mad, so instead I’ll just tell you that I had enough beans and salsa leftover to eat for lunch the next day. Just dumped it on top of a bed of spinach – that’s it. And it was delicious! I think Mexican salads are my favorite. Just add beans and corn together and I’ll eat them on top of anything.

So, that’s the big news for this week. Oh yeah, and tomorrow’s Thanksgiving! Hehe. I guess it’s time to reveal what the sis and I have planned for Turkey Day dinner. Wellps, our “healthy” menu reads like this:

Good Eats Roast Turkey (After having used this Food Network recipe for the past 2 years, I am convinced that the key to a successful bird is brining. I’m never going back.)

Salad with Roasted Beets, Red Onion, Cranberries, Goat Cheese, and Arugala (and a home-made honey-mustard vinaigrette I’m going to try to whip up.)

Green Beans with Citrus and Almonds

Roasted Garlic Mashed Potatoes (So this recipe calls for roasting garlic fully in olive oil until it gets all mushy and soft and delish, and then you puree the garlic and use that in the potatoes and save the oil for cooking or salad dressings or whatever. My sister’s friend said that she served potatoes like this to her husband and he had no idea there wasn’t any butter in them!!)

Duet of Sweet Potatoes – Savory and Sweet (half the sweet potatoes will be done with rosemary and parmesan and half will be done up with brown sugar and, well, butter. But I’ll try to steer towards the savory and I think it’ll be ok.)

Cranberry Walnut Stuffing (I think the trick here will just be to not use butter and still be able to keep the stuffing moist. But I bought Smart Balance for everything just in case, since at least that’s better than whole butter.)

Duo of Cranberry Sauce (I already made the citrus cranberry sauce that turned out really yummy last night. But I’m so excited to try to make cranberry sauce with jalapeño after an episode of Food Network I was watching! Plus when I was in high school, I bought a jar of cranberry jalapeño jelly and it was amazing.)

Pumpkin Pie

Lemon Meringue Pie

Cherry Pie (my sister’s husband’s contribution to the feast!)

Whew. That’s a long list. And a lot of food for the 8 people that will be eating it… but Thanksgiving is a holiday that MUST have leftovers. Leftover T-Day Turkey Sandwiches are kind of the best thing in all of creation, after all!

Okay, that really is it for now! You guys will be getting a big ol’ update either tomorrow night or Friday regarding how I did at the 5K and how I did at Thanksgiving dinner, hehe. Please think amazing, endurance-y, stamina-y thoughts for me tomorrow at 8:30! Ahhhhhhhhhhhhhh!!!!!


  1. The race is going to be awesome- I’m excited for it!! Two other things- 1) you forgot to list the fantastic home made rolls I’m going to be making and 2) that home made chipotle looks AMAZING!! I had this on my screen at work and a girl passing by was like “wow, what is that? it looks awesome”

  2. you are going to be so great tomorrow! i remember my first run (it was at west potomac park too!) and i was so nervous, who am i kidding, i still get nervous before a run…but all you need to do is remember to breathe and just go with it. with all the people running and cheering, it will be wonderful…and when you’re done, that feeling of crossing the finish line makes it all worth it. best of luck, my darling! i’ll be thinking of you and rooting for you!
